Recipe Box: Easy Italian Sausage and Vegetable Fried Rice

Fried rice is a staple in our monthly menu.  Not only is it really easy to prepare.  It’s also very budget friendly.  In fact, my kids always look forward for the “special fried rice” day.  Why?  Well, let’s just say that the end product never disappoints and is unpredictably yummy.  

This simple dish is a great way to use any leftovers in the fridge and pantry. For those on a tight budget, this one pot meal will really help you stretch that dollar without sacrificing your health. As you can see, this contains grains, veggies and meat. It’s very filling and of course allergy friendly.

Italian Sausage and Veggie Fried Rice Recipe

The secret to this stir fried rice is the proper browning of the sausage.  The toasted sausage bits give the rice a unique texture and flavor.   Almost like bacon but with a hint of Italian spices. The corn and peas add some sweetness to this savory concoction.  Easy to make yet complex in flavor.

Yes, you can make something gourmet from cheap ingredients and even leftovers.  Just don’t let your friends know.

Ingredients

  • 1 Tbs. olive oil (or bacon grease if you have it)
  • 2 pcs. Italian Sausage (I use the Wegmans’s brand)
  • 1/3 cup frozen peas
  • 1/3 cup frozen corn
  • 1/3 cup chopped onions
  • 1/2 tsp. garlic powder
  • 1 tsp. sea salt
  • 6 cups cooked rice (leftovers worked perfectly well)
  • 2 Tbs. chopped fresh parsley

  1. Remove the casing of the sausages and crumble.
  2. In a large saute pan or wok, brown the sausage in oil. This takes about 7-10 minutes.
  3. Once the meat is nicely browned, add the onions and cook until it is translucent.
  4. Add the rice and mix well. Make sure there are no big lumps.
  5. Season with salt and garlic powder.
  6. Add the corn and peas to the rice.
  7. Stir fry the rice mixture for about 8-10 minutes until everything is evenly hot.
  8. Turn off heat. Add the chopped parsley and mix.
  9. Serve hot.
